Chilling & Freezing Time
6–8 Hours
Ingredients
- 500 ml heavy cream
- 250 ml whole milk
- 4 egg yolks
- 100 g caster sugar
- 2 tablespoons Exotic Vanilla Beans Paste with Seeds
- Pinch of salt
Equipment Required
- Saucepan
- Mixing bowls
- Whisk
- Fine strainer (optional)
- Ice cream maker (optional)
- Freezer-safe container
Method
Step 1: Warm the Dairy
In a saucepan, combine the milk and half of the heavy cream. Heat gently over medium-low heat until warm. Do not allow the mixture to boil.
Step 2: Prepare the Custard Base
In a separate bowl, whisk together the egg yolks and
and sugar until the mixture becomes pale, smooth, and slightly thickened.
Step 3: Add Exotic Vanilla Beans Paste
Stir in 2 tablespoons of Exotic Vanilla Beans Paste with Seeds. The natural vanilla seeds will infuse the mixture with a rich aroma and beautiful speckled appearance.
Step 4: Temper the Eggs
Slowly pour the warm milk mixture into the egg mixture while whisking continuously. This prevents the eggs from curdling.
Step 5: Cook the Custard
Return the mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon.
Step 6: Cool and Chill
Remove from heat and allow the custard to cool completely. Stir in the remaining cream and refrigerate for at least 4 hours or overnight for best results.
Step 7: Churn or Freeze
Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer's instructions.
If you do not have an ice cream maker, pour the mixture into a
freezer-safe container and freeze, stirring every 30–45 minutes until smooth and creamy.
Step 8: Serve and Enjoy
Once fully frozen, scoop into serving bowls and garnish with vanilla bean seeds, fresh berries, or chocolate shavings.
🍦 Congratulations! You've officially transformed a handful of simple ingredients into a scoop of pure vanilla happiness. Your Exotic Vanilla Ice Cream is ready to enjoy!
